A coffee that preserves its natural honey
A carefully processed coffee, preserving its natural honey. This “honey”, is a gelatinous skin, naturally present around the coffee bean. It is dehydrated while drying, and stuck to the bean. Resulting in a more complex cup, with a pronounced sweetness, evened by a medium acidity and body. Its ripe pineapple fragrance preserves in its flavor the delicacy of the wine, and the sweetness of the red fruits, which are complemented by the strength of marked oak notes, similar to the best wines.BUY KNOW MORE
Greater body and character
In our “Natural” coffee, sweet and vinous notes stand out; obtained by carefully drying the coffee cherries without quitting its pulp, with all its fruit attributes. This method also gives a greater body and character with a pleasant and persistent residual flavor, it is also the most ecological coffee that can be produced, as we do not use water in this process.BUY KNOW MORE
OUR COFFEE RESERVE
Our grandparents settled in Finca la Manchuria at the beginning of 20th century and have grown coffee since then.
The property is currently owned by Armelle and Eduardo Vélez, who after living 40 years in France and Mexico, returned to Colombia to develop this agro-tourism project and open their doors to foreign visitors and international buyers, letting the world know about our coffee plantations and the culture embracing it.
Our 85-hectares coffee reserve is surrounded by 135 hectares of native forest and 80 hectares of pine forest, which mitigates 5,400 tons of CO2 annually. In addition, this forest is the factory of a large amount of water (600 lt / S), which supplies not only our needs, but also those of the surrounding communities, allowing us to maintain our waters levels, local flora and fauna among which, many native species of birds and butterflies.
We are developing our own apiary system for environmental improvement and pollination.
Our staff is made of more than 45 employees, all declared to the health and retirement system, which differentiates us from our neighbors and makes us pioneers in good practices, in agricultural equity and sustainability.
Following this goal, we train all our staff to develop skilled operators aware of the importance of their work, a vital element to ensure the quality of our special coffee.
We also look after the well-being of our employees and their families, we provide a free daily transportation for their children with our jeep, to the local schools, 9 kilometers away.
Our comfortable and modern facilities, with a capacity to receive more than 200 harvesters during the harvest season, allow us to humanize their stay and avoid social confrontations and staff turnover.
OUR COFFEE FABRIC
Our coffee factory, or “beneficiadero”, guarantees an excellent cup quality, since it meets high-quality standards, and has the capacity to process 100% of our production, directly on site.
We have a staff expert in fermentation, which allows us to control the process, and exploit the qualities of our coffee, thus managing to extract the best from each bean and offer a spectacular drink.
The result is a balanced coffee, with a great diversity of flavors and fragrances. We can produce sweet coffees, other more vinous, or tending to chocolate notes. What never changes, is the dedication and professionalism leading every step of our unique processes.
The drying of our coffee is done slowly to conserve the shelf life of the bean, thus enhancing its attributes in the cup.
In none of our processes do we use fossil fuels, as these may alter the quality of the bean and harm environment.
Café la Manchuria is a high altitude Arabica coffee cultivated between 1400 and 2000 meters above sea level, nestled high up in the Andes mountains, bathed by the cold currents generated by the Farallones del Citará and Cerro Plateado in the middle of the western mountain range of the Andes and regulated by the breezes of the Pacific Ocean and the vegetation that surrounds it, generating a sustainable and friendly coffee, favoring its excellent balance in the cup.
Our varietal Arabica coffee lots: Castillo, Catuay, Castillo Centro, Tabi and Geisha, allow us to offer specialty coffee, respecting the principles of Rain Forest certification, guaranteeing the traceability from our plantation until the cup of the consumer.
We use all green by-products to transform them into organic fertilizers and soil conditioners, with which we can bring water contamination down to zero.
